A tasty tradition
Black Butter making is centuries old Jersey tradition - a tradition kept alive by National Trust Jersey at their annual Black Butter event every October.
Made from apples, cider and spices (absolutely NO butter), the mixture is stirred for 36 hours in a special copper vessel called a bachin (a Jersey French name) over an open wood fire. Teams of volunteers work to peel the apples, stir the mixture and keep the fire stoked. The end result is a spicy apple conserve with a rich taste that can be used as a jam.
We produce our own Black Butter to use in our fudge from a secret family recipe. We sent our Black Butter fudge in to the Guild of Fine Foods in their annual international judging event and were delighted to be awarded a prestigious 2 gold star award.
A product unique to Jersey - it's a true taste of our island tradition.
